Ingredients

  • 1 avocado
  • 1 orange
  • 1 fennel
  • 3.5 oz marinated anchovies
  • salt
  • pepper
  • 3 tbsps extra virgin olive oil
  • 1/2 lemon

Tools

  • 1 Knife
  • 1 Mandolin slicer
  • 1 Plate

Steps

  • Cut the avocado in half with a knife and remove the central pit.

    Use a spoon to scoop out the flesh gently separating it from the skin.

    Drizzle with lemon juice and slice thinly lengthwise.

    Arrange the avocado slices on a serving plate.

    Peel the orange and use a knife to remove the segments.

    Place the orange segments on the avocado along with the marinated anchovies.

    Finally, clean the fennel from the tougher parts and slice it with a mandolin slicer after washing and drying.

    Add the fennel and dress with oil, salt, and pepper.

    Keep refrigerated until ready to serve.

Tips

You can prepare it up to an hour ahead, otherwise the avocado will tend to oxidize and the fennel will release its natural moisture.

You can add toasted pistachios or slivered almonds or even my Crunchy Seeds in Soy Sauce for a crunchy note
