Since I discovered chia pudding, I’ve enjoyed experimenting with different versions every week to vary my morning breakfasts! If you are not familiar with it yet, it is a kind of Anglo-Saxon chia seed pudding that is really easy, quick, and super healthy! In essence, chia seeds are soaked in plant-based milk and sweetened with honey or agave syrup. When in contact with these liquids, the seeds rehydrate and swell, forming a gelatinous mixture similar to a pudding. Then, it is garnished with other ingredients such as yogurt, fresh fruit, dried fruit, chocolate flakes, etc. It will take from 20 minutes to three hours to create this magic, which is why if you’re in a hurry, I recommend preparing it the night before and storing it in the refrigerator to have it ready the next morning, adding the topping you desire. A little indulgence I recommend trying that you can appreciate not just for breakfast, but at any other time of your day, from an afternoon snack to a desire for dessert after a meal!

- 1 banana
- 1 3/4 oz whole grain oat flakes
- 3/4 cup oat milk
- 1/4 cup chia seeds
- 1 tbsp unsweetened cocoa powder
- 5 oz Greek yogurt 2% fat
- 1 tsp vanilla extract
- 1/2 banana (sliced)
- 1/3 oz 85% dark chocolate
Tools

Steps
In a blender, place the banana previously sliced along with the oat flakes.
Add the chia seeds and the cocoa
Pour the oat milk and blend for a few minutes intermittently.
You should obtain a still liquid mixture but quite homogeneous. Stir, cover with a stretchable silicone lid or plastic wrap and place in the fridge for at least 1-2 hours but preferably overnight*
After this time, the chia seeds will have absorbed all the liquid and doubled in volume.
In a bowl, flavor the yogurt with vanilla extract and mix well.
In the meantime, peel half a banana and slice it, then halve the slices.
You are ready to compose 2 small bowls, placing at the base of each the banana chia pudding.
Finish with vanilla yogurt and distribute it with a spatula.
Decorate with banana slices and coarsely chopped dark chocolate with a knife.
And voila…the banana chia pudding is ready to be enjoyed!

Tips, notes, variations, and suggestions
🟣 *Soaking chia seeds is always mandatory, and must be at least 30′, because they have a great capacity to absorb liquids. If ingested without prior soaking, they could cause dehydration as they would absorb water directly from our bodies; not only that, soaking makes them easier to digest, also increasing the availability of their nutrients. In fact, since chia seeds are rich in fiber, protein, omega-3 fatty acids, and antioxidants, soaking can help release these nutrients, making them more easily absorbable by the body.
🟣 As an alternative to oat milk, you can use any other plant-based milk you like. I usually also use almond milk, obviously in my Sicilian case, but if what you can find is only in brick, I recommend adding an almond flavor vial to give an extra burst of flavor; another excellent option is definitely also vanilla soy milk or rice milk which is definitely more neutral.
🟣If you tend to love sweeter aftertastes, instead of unsweetened cocoa powder, you can use sugared cocoa, for a touch of extra sweetness.
🟣Instead of vanilla extract, try flavoring Greek yogurt with a teaspoon of agave syrup or acacia honey or peanut butter.
