Fresh Salmon Salad

Fresh salmon salad is a light yet tasty dish made with steamed fresh salmon. Composed of green salad, radicchio, avocado, oranges, and pomegranate seeds, all seasonal ingredients. To dress it, I chose my mustard vinaigrette to add a slightly spicy touch. The ideal is to choose wild salmon, which unfortunately is not always available. It can also be served as an appetizer!

Ingredients

  • 10.5 oz salmon
  • 1 orange
  • 1/2 pomegranate
  • 1 avocado
  • 4 leaves lettuce
  • 4 leaves radicchio
  • 2/3 cup extra virgin olive oil
  • 3.5 tbsp white wine vinegar
  • 2 tbsp mustard
  • salt

Tools

  • 1 Steamer
  • 1 Knife
  • 1 Bowl

Steps

  • Prepare the steamer by adding the orange peels to the water.

    Place the salmon in the basket and cook for 20 minutes.

    Remove from the steamer and let cool.

  • Put the salt and vinegar in a bowl. Mix with a whisk to dissolve the salt.
    Add the mustard and oil then emulsify with the whisk.
    Use immediately.

  • Arrange the radicchio and lettuce leaves broken in half on two plates.

    Open the avocado and cut it into cubes.

    Peel the orange and take the segments.

    Deseed the pomegranate.

    Add all the ingredients to the two plates and finally the salmon cut into large pieces.

    Dress with the vinaigrette and serve immediately.

Tips

It can be stored in the refrigerator for 1 day.

The salmon can also be warm if preferred.

As an alternative to the mustard vinaigrette, you can dress with oil and salt, also with added lemon.
