The gnocchi without potatoes is a simple, quick, and economical recipe. They can also be prepared in a very short time, just bring water with salt to a boil and then mix with the flour. Once the dough has cooled, you can form the gnocchi. Any sauce, like meat, fish, or vegetable sauce, will work. These gnocchi without potatoes are very light and easily digestible. The recipe I propose is from my grandmother, who often seasoned them with meat sauce.

- 4 cups all-purpose flour

Steps
Pour the water into a pot with the salt and bring to a boil.
Meanwhile, prepare the flour in a mound on the work surface.
Gradually add the water and mix the flour with a fork.
Try to knead with the help of a scraper.
Once the dough is formed, proceed to form logs and cut the gnocchi.
Place them on a tray with a sprinkle of semolina flour or rice flour.
Cook them like classic potato gnocchi.
Tips
They can be stored raw in the refrigerator, wrapped with a cloth.
They can be frozen directly on trays. Once frozen, they can be placed in food bags.
