Last week I came home really late for lunch and still had to think of something quick to get on the table as soon as possible! So I experimented with avocado balls, which I urgently needed to use up, hoping for a good result for the palate! Well, they were so good, my husband devoured them! Unfortunately for him, I had only made 8 divided between the two of us, so I understood that next time I should at least double the quantities! Moreover, I prepared them so quickly that after just twenty minutes we were already sitting down to enjoy them! No blenders, mixers, or other kitchen tools, just a bowl and a fork! After this premise, you’ll think that today’s avocado balls are the same as those I experimented with the previous week, but actually, they’re not! I repurchased all the ingredients with that precise purpose, but along the way, inspired by creativity, I radically modified the recipe creating a second version which, in my opinion, is even more appetizing and intriguing, although a bit less quick! Now I’ll have to prepare the first one again and leave you to choose the best! These balls are anyway fantastic bites, super crispy on the outside and soft on the inside, to propose as a vegetarian-style second course, accompanied by a fresh seasonal salad. However, if necessary, they can be transformed into delicious finger food to present to guests in a buffet with a quick and velvety yogurt and avocado cream that will make you look great! Try them, I’m sure you’ll fall in love with them too!

Ingredients
- 2 avocados (ripe, approx. 220 g of pulp net weight)
- 1/2 cup fine breadcrumbs
- 1/3 cup grated Grana Padano
- 1 egg yolk
- A few drops lemon juice
- to taste extra virgin olive oil
- 2 pinches salt
- to taste pepper
- to taste all-purpose flour
- 1 egg
- 1 egg white
- 3/4 cup fine breadcrumbs
- 1/3 cup coarse breadcrumbs
- 1 g nutmeg
- to taste salt
- to taste pepper
- 2 avocados (ripe)
- 1 tbsp 2% Greek yogurt
- 1/2 lime juice
- 1 tbsp extra virgin olive oil
- to taste garlic powder
- to taste salt

Steps
Wash the avocados thoroughly under running water. With a knife, cut them in half and remove the pit.
With a spoon, scoop out the pulp, transfer it to a large bowl, and drizzle with a few drops of lemon juice to prevent oxidation.
Add 2 pinches of salt, a grind of pepper, and the grated Grana.
Add the egg yolk, mash with a fork, and finally add the breadcrumbs.
Mix well until you obtain a soft yet workable and compact mixture. Temporarily refrigerate.
In the meantime, arrange in 3 separate bowls the flour, a mixture of fine and coarser breadcrumbs* and a beaten egg and egg white with a pinch of salt and nutmeg.
Retrieve the avocado mixture, use your hands to take portions slightly larger than a walnut and shape your balls.
Roll them first in the flour, removing the excess.
Then dip them into the beaten eggs until fully covered.
Finally in the breadcrumb mix.
Place the balls on a baking sheet lined with parchment paper and drizzle the surface with a bit of olive oil. Bake in a preheated oven at 392°F (200°C) for 20 minutes, then turn them over and complete the browning for another 5 minutes.
Enjoy them hot and crispy with the yogurt and avocado cream, whose quantities you find above in the ingredients section.
And voilà…the crispy avocado balls are ready to be enjoyed!

👉The crispy avocado balls can be stored in the fridge in a suitable container for refrigeration, preferably glass, for a maximum of 3-4 days.
Tips, Notes, Variations, and Suggestions
🟣* The secret of crispy breading for an incredible crunch effect is to mix a part of fine breadcrumbs with a portion of homemade breadcrumbs, which, as you can see in the photo, is much coarser. It is obviously not mandatory, but it will really make the difference.
🟣You can enrich the base of your balls with spices to taste like ginger, paprika, turmeric, etc., and aromatic herbs such as thyme, parsley, basil, and mint.
