A few days before the Halloween party, the most popular worldwide, which spread from America to here and was adopted by us Italians as well, I couldn’t help but offer something truly spooky! Of course, you know me; I’m not a fan of spectral themes, and my proposals certainly won’t be that scary, but I prefer to focus on easy and quick treats because I believe that in the end, simplicity and practicality always win! This year, I therefore propose these Halloween dunking cookies, perfect for breakfast with milk, kids will love them, and without having to use any themed cookie cutter! In just a few simple steps, you can create wholesome and at the same time delicious cookies by simply decorating them with some sprinkle candy shaped like mummies, eyes, or witches, easily available at this time of year in grocery stores (I, for example, found them at Lidl)! Simply create an oil-based dough, very easy to work with, that doesn’t even require resting in the fridge, and form balls with your hands that will be directly flattened on a baking sheet with the help of a glass! Easier than that! I made two versions by adding themed sprinkles directly before baking or immediately after, when still warm, adding a touch of pistachio topping to make them stick, making them even more delicious! Which one will you try?

- 1 cup g type 1 flour
- 1 cup g all-purpose flour
- cornstarch
- g unsweetened cocoa powder
- g brown sugar (or 1 cup of erythritol)
- 2 eggs (at room temperature)
- g peanut oil
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1 pinch salt
- 18 glitter sugars (Halloween themed)
- to taste powdered sugar (optional)
- to taste pistachio cream (optional)
Tools
- 1 Bowl
- 1 Basin
- 1 Hand whisk
- 1 Sieve
- 1 Teaspoon
- 1 Sifter
- 2 Gloves
- 1 Baking tray
- 1 Mat
- 1 Parchment paper
- 1 Glass
Steps
In a large bowl, whisk the eggs at room temperature with the brown sugar.
Once you achieve a slightly light and frothy mixture, add a pinch of salt, oil, and vanilla extract.
In a separate basin, sift all the powders, i.e., the two flours with the baking powder.
Sift the cornstarch as well
And finally the cocoa and mix.
Gradually add the powders to the liquids, continuing to work with the whisk.
Once the mixture begins to compact, transfer it onto a work surface and continue to knead it with your hands.
You should obtain a smooth, homogenous and non-sticky dough.
Take portions of dough and form balls about 1 oz each.
Place them directly on a baking tray with a silicone mat or simple parchment paper and slightly flatten them using with a glass, placing a square of parchment paper between it and the cookies.
Decorate with themed sprinkles and put in a preheated oven at 350°F for 9′-10′.
Once baked, remove and dust with a little powdered sugar.
And there you have it…the Halloween dunking cookies are ready to be enjoyed!
You can make the cookies even more tempting by adding a teaspoon of Nutella or pistachio cream in the center when they’re still warm and sticking the sprinkles on top. You’ll taste that extra sweetness with every bite!
