- 5 eggs
- 2/3 cup all-purpose flour
- 1/3 cup vegetable oil
- 4 tbsps water (Hot)

Separate the egg whites from the yolks. Whip the egg whites until stiff with a pinch of salt. In another bowl, whip the yolks with the hot water until you get a light and frothy mixture. Add the oil
then gently fold in the flour and finally the whipped egg whites, mixing from bottom to top.
Baking:
Pour the mixture onto a (13×13 inch) tray lined with parchment paper.
Sprinkle the surface with pistachio crumbs. Bake in a static oven at 356°F for about 20 minutes.
Prepare the filling:
Clean the avocado, add the cherry tomatoes,
add the lemon juice, salt, and oil and blend until smooth and velvety.
Assemble the swirl: Once baked, flip the base and gently remove the parchment paper. Trim the edges
cut 5-6 strips of the same size. Spread the avocado cream on each strip and add the smoked salmon.
Roll the first strip on itself, then add the others to form a large swirl.
Before serving, garnish as desired with salmon slices, pistachio crumbs, or fresh dill.
