- Half pandoro
- 1 cup oz heavy cream
- 5.3 oz mascarpone
- 2.8 oz sugar
- 7 oz jam (To taste)

Cut the pandoro into slices. Place a sheet of plastic wrap on the work surface and arrange the slices slightly overlapping to form a rectangle. Gently flatten the slices with a rolling pin to make the base even. Spread a layer of red fruit jam over the entire surface.
Prepare the cream: In a bowl, place the heavy cream, mascarpone, and sugar. Whip until you get a smooth, fluffy, and stable cream. Distribute about three-quarters of the cream over the pandoro, spreading and leveling it evenly.
Using the plastic wrap to assist, gently roll everything into a compact log. Seal the plastic wrap tightly and transfer to the refrigerator for a few hours. Once firm, remove the plastic wrap and cut the ends of the log for a clean cut. Then cut two thick slices diagonally: these will be the “branches” of the log.
Place the log on a serving plate, add the two slices on the sides to create the log effect. Cover with the remaining cream and decorate as desired (powdered sugar, red fruits, coconut, sprinkles, etc.).

storage & tips:
The pandoro log keeps in the refrigerator for 2–3 days, well covered with plastic wrap or in an airtight container. You can prepare it in advance the day before: in fact, resting in the fridge makes it even more compact and tasty. Freezing is not recommended due to the cream, which may lose its consistency.
