Butter-Free Marble Cake in Air Fryer

The butter-free marble cake in an air fryer, a cloud of softness, perfect for breakfast or a sweet break during the day.

The peculiarity of this version is the cooking in an air fryer, which allows you to obtain a soft inside and delicately golden outside, without the use of a traditional oven. The cake features a marbled effect: an alternation of light and dark batters, enriched with cocoa, creating a visually appealing and tasty pattern. It’s a quick and easy solution, ideal for making use of your air fryer.

The recipe is from the yogurt and cocoa marble cake by Benedetta Rossi, we halved the doses because our air fryer is smaller and used an 18-centimeter diameter mold.

Ingredients for the butter-free marble cake in air fryer:

  • 1 medium egg (at room temperature)
  • 3/4 cup all-purpose flour
  • 1 tbsp unsweetened cocoa powder
  • 1/3 cup granulated sugar
  • 1/4 cup yogurt
  • 3 tbsp vegetable oil
  • 1 1/2 tsp baking powder
  • 2 tbsp whole milk
  • to taste powdered sugar (for the final decoration)

Steps for preparing and baking the marble cake:

  • Grease and flour an 18-centimeter (7-inch) ring mold, if you have a larger fryer you can use a 22-centimeter (9-inch) mold and double the ingredient quantities.

    In a large bowl, place the egg and sugar and beat the ingredients well with a whisk to obtain an almost white mixture (alternatively, you can use an electric mixer).

  • Now add the yogurt, vegetable oil, and milk and mix them into the egg and sugar mixture, then sift in the flour and baking powder and add them to the mixture, working well to obtain a smooth, lump-free batter.

    Pour HALF of the batter into the mold, leveling it well, then add the cocoa powder to the remaining batter in the bowl and mix well, then pour it into the mold over the light batter.

    Using the back of a spoon, swirl the batter WITHOUT touching the bottom of the pan to achieve a marbled effect.

  • Place the pan on the air fryer rack and cook at 300°F for 25 minutes, after the time has passed perform the toothpick test.

    Let the cake cool and just before serving, dust it with powdered sugar.

Tips:

For an even more indulgent version, you can add chocolate chips to the batter.
