Christmas Log of Panettone with Coconut and Nutella

Ingredients
- panettone
- 1 cup heavy whipping cream
- 5.3 oz ricotta
- 0.25 cup sugar
- 0.67 cup shredded coconut
- 7 oz Nutella®
- vanilla
Steps

Cut the panettone into slices and lay them on the work surface on a sheet of plastic wrap, slightly overlapping them. Gently flatten them with a rolling pin to obtain a uniform base.
Spread a generous layer of Nutella over the entire surface.
Prepare the coconut cream: in a bowl, whip the cream, sugar, and ricotta.
Add a few drops of vanilla extract and the shredded coconut, achieving a soft and homogeneous cream. Spread about three-quarters of the cream over the panettone base. Use the plastic wrap to roll everything into a log.
Tighten well and place in the refrigerator for a few hours to set. After the time has passed, remove the ends of the roll for a clean cut. Then cut two slices diagonally and arrange them on the sides to give the typical log shape. Cover the dessert with the remaining coconut cream and decorate to taste with coconut, red fruits, sprinkles, or chocolate.

Storage:
The panettone log with coconut and Nutella can be stored in the refrigerator for 2–3 days, well wrapped in plastic wrap or in an airtight container. In fact, resting makes it even better, as the flavors meld and the cream sets perfectly.
Freezing is not recommended due to the presence of ricotta.
