First, clean the shrimp: remove the shell, leaving the tail if you wish for a more scenic effect. Cut the back with a small knife and remove the black vein. Rinse them well under running water and pat them dry with kitchen paper. Take a small bundle of kataifi dough and wrap each shrimp one by one. Place the shrimp in the air fryer basket without overlapping them. Add a pinch of salt and spray a little oil to make the kataifi golden. Cook at 356°F (180°C) for about 10 minutes until they are crunchy and golden.
Serve immediately, while still hot and crunchy. They are perfect also with a yogurt sauce, avocado cream, or simple lime mayonnaise.

It is advisable to consume the shrimp immediately, when the kataifi dough is crunchiest.
If any are left over, you can store them in the fridge for 1 day, sealed in an airtight container.
