Ingredients for the 🧀 Savory Christmas Tartlets Filled:

about 20 tartlets

  • 2 cups all-purpose flour
  • 1/2 cup butter
  • 1 egg
  • 1/4 cup Parmesan cheese
  • salt
  • 3 tbsps water
  • 5.3 oz mushrooms
  • 2.8 oz ricotta cheese
  • 1/4 cup Parmesan cheese
  • salt
  • parsley

Tools

Christmas press molds/cookie cutters → to create the base and imprint the decorations
Rolling pin → to roll out the shortcrust evenly
Parchment paper → to roll out the dough and bake without sticking
Bowls → to mix the dough and filling
Whisk or stand mixer (with K beater) → to blend the shortcrust well
Spatula or teaspoon → to distribute the filling
Flat baking sheet → to bake the tartlets
Cooling rack → to cool without moistening the base
Plastic wrap → to rest the shortcrust in the fridge
Pastry brush → to brush oil or milk on the surface before baking (for a more golden color)
Small knife or pastry wheel → to trim edges if necessary

  • Prepare the savory shortcrust
    In a bowl combine flour, salt, and Parmesan cheese.
    Add butter, egg, and mix quickly until forming a smooth dough (add water if needed).
    Wrap in plastic wrap and let rest in the fridge for 30-40 minutes.

  • Prepare the filling
    Place cooked mushrooms, add ricotta, Parmesan cheese, salt, pepper, and parsley, and chop.
    Roll the shortcrust between two sheets of parchment paper to a thickness of 1/8 inch.
    Use the mold upside down to cut out the base and cover.
    Place a teaspoon of filling in the center of the base, leaving the edge free.

  • Place the other disk on top and seal the mold by pressing. Remove excess and unmold the tartlet. Continue the same way with the others.
    Place the tartlets on a baking sheet lined with parchment paper.
    Bake in a preheated static oven at 340 °F for 12-14 minutes, until slightly golden.
    Cool on a rack.
    You can brush them with a drizzle of oil and sprinkle with poppy seeds or chopped rosemary for a Christmas touch.

At room temperature: in an airtight container for 1 day.
In the fridge: up to 3 days, bringing them to room temperature or slightly warming them in the oven before serving.
Freezing: you can freeze them already cooked and reheat in the oven for 5-6 minutes before serving.
