Preparation of the base
Mix flour, sugar, baking powder, and salt.
Add the cold butter, pistachio paste, pistachio crumbs, plant-based milk, and vanilla or lemon zest
Knead until you get a smooth dough.
Wrap in plastic wrap and let it rest in the refrigerator for 30 minutes. After about 30 min divide the dough into two equal parts.
Roll out the dough one piece at a time and cut out the tree shapes.
Bake in a preheated oven at 350°F for 12–15 minutes until golden and allow to cool.
Preparation of the pistachio cream
Place the cream, sugar, mascarpone, pistachio paste, and pistachio cream into a bowl and whip until smooth and consistent. Transfer the cream into a piping bag.
Assembly of the tree
Place the first disc as a base.
Spread an even layer of pistachio cream, place the other shape on top, add the remaining cream as desired, and decorate with pistachio crumbs, red fruits, Christmas cookies, and powdered sugar for a festive effect.
