- 12 oz fennel (weighed already cleaned)
- 3 tablespoons breadcrumbs
- 1 clove red garlic
- 1 tablespoon parsley (fresh)
- 1 pinch fine salt
- 1 tablespoon extra virgin olive oil

Preparation of Light Gratinated Fennel
Clean the fennel from waste parts, wash them well and dry them, thinly slice them.
Place parchment paper on a baking tray and arrange the fennel slices on top.
Using a cutting board and a sharp knife, finely chop parsley and garlic, put them in a bowl.
Add the breadcrumbs and a pinch of salt to the garlic and parsley, mix and distribute the mixture over the fennel slices, also drizzle the oil on top.
Preheat the oven to the maximum temperature and when it is very hot, bake, cook for 15/20 minutes, once cooked take them out and enjoy them, these light gratinated fennel are excellent both hot and cold!
