Boil the potatoes in plenty of salted water until soft. Drain, peel, and mash them with a potato masher until you get a smooth puree.
Cut the porchetta into small pieces.
Incorporate it into the potato puree. Mix well to evenly distribute the flavor. Add salt if necessary.
Take a portion of the mixture and form croquettes in the shape you prefer: round or elongated.
Coat the croquettes in breadcrumbs, making sure they are well covered on all sides for perfect crispness.
Place the croquettes in the air fryer basket, without overlapping, leaving some space between each for even cooking.
Cook for 12-15 minutes, turning them halfway through, until golden and perfectly crispy.
