In a bowl (or stand mixer), combine flour, salt, and herbs.
Add the chilled vegetable margarine and work with your fingertips (or K-beater) until the mixture is sandy.
Gradually pour in the plant-based milk and knead quickly until a smooth dough forms.
Wrap in plastic wrap and let rest in the fridge for 30-40 minutes.
Roll out the dough to a thickness of 1/8 inch. Cut out circles
place a disc in the floured mold, pressing well onto the sides.
Place a teaspoon of mushrooms in the center of the pastry, leaving about 1/4 inch free from the edge.
Cover with another dough disc, close the mold, and seal the edges gently.
Remove the excess dough to get a smooth and regular star.
Immediately unmold and place it on a baking sheet lined with parchment.
Arrange stars on a baking sheet lined with parchment.
Brush the surface with a thin layer of plant-based milk and, if desired, sprinkle with sesame or poppy seeds.
Bake in a preheated static oven at 340°F for 12-14 minutes, until slightly golden.
Cool on a rack.
Serve warm, garnished with a bit of fresh chopped rosemary for a Christmas touch.
Tips and Variations
For a more intense flavor: add a few drops of truffle oil or a pinch of nutmeg to the filling.
For a contrast of textures: add some chopped toasted nuts (walnuts or hazelnuts) to the filling.
For buffets: make smaller stars (1-1.5 inches) for Christmas finger foods.
