Ingredients for Sweet Cheese Brioche Buns:
- 4 cups all-purpose flour
- 1/2 cup sugar
- 1 1/4 cups milk
- 3 egg yolks
- 3 1/2 tbsps butter
- 2 tsps fresh yeast
- lemon zest (and orange)
- 1 lb cheese (Mixed)
- 1/2 cup sugar

Prepare the dough:
In a large bowl, place flour, sugar, lemon and orange zest, yeast, egg yolks, and start kneading by adding milk a little at a time.
Add the butter a little at a time and knead for about 10 minutes. Shape the dough into a ball, place it in a container, cover it, and let it rise until it triples in volume.
Prepare the filling
In another bowl, combine cheeses, eggs, sugar, lemon and orange zest, and vanilla flavoring. Mix until you get a smooth cream.
Shape the brioche buns:
