Steps for Sour Cream Potato Salad
Wash the potatoes, wrap them in plastic wrap, and cook them in the microwave. Choose them of the same size so they cook evenly; if they are small, they require less time; if they are large, they need more time. They are ready in about 8 minutes when cooking at 1200 watts of power. If you cook them at a lower power, it will take a few more minutes. Alternatively, you can also boil them, or bake them wrapped in aluminum foil, until they are soft, at maximum temperature.
When the potatoes are cooked, remove them from the wrap. Let them cool a little before cutting them in half and peeling them quickly, using a small knife to clean and slice them thickly.
Place the potatoes in a bowl, season with salt and olive oil, and mix.
Finally, add the sour cream, ground pepper, and parsley if you like. You can enjoy the salad immediately or even enjoy it cold.
