In these cases, we are helped by those treats that are called fit on the web, but I prefer to call them simply light, genuine, and low-calorie. A small and sweet indulgence that won’t make you feel too guilty! These carrot and Greek yogurt donuts fall into this category. They are very simple and super quick to make, you don’t even need electric beaters, and they bake in just 10 minutes! Of course, if you don’t have a donut mold, you can make muffins, but in that case, I’ll tell you, the baking time will be extended by a few more minutes. The batter is based on Greek yogurt and grated carrots, so it’s very healthy as no fat is added, and they are super soft, believe me!!! They will be perfect, given their size, for a mid-morning snack or a healthy snack for your kids. My husband and I had them in the morning dipped in milk and coffee, and I must say they provide the right energy to start the day without being as heavy as commercial snacks. They are a good compromise for those who like to indulge without excess. Try them and let me know!

Ingredients

- 3/4 cup type 1 flour
- 1/2 cup 2% fat Greek yogurt
- 1/2 cup carrot (grated)
- 1 egg
- 1/4 cup plant-based milk
- 1/4 cup honey (or erythritol, sugar, etc.)
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1 pinch salt
- as needed powdered sugar
Tools
- 1 Bowl
- 1 Hand Whisk
- 1 Grater
- 1 Spatula
- 1 Donut Mold
- 1 Ice Cream Scoop
Steps:
Start by grating the carrot with a medium-hole grater.
Transfer the grated carrot into a bowl and break in an egg.
Add the Greek yogurt and honey and work with a hand whisk.
Add the vanilla extract and the milk in a stream, continuing to work with the whisk.
Finally, add the flour and the sifted baking powder, and a pinch of salt.
Work with a spatula until you obtain a homogeneous mixture.
Transfer everything into a silicone mold slightly oiled or a classic mold previously buttered and floured.
Place in a preheated oven at 350°F for 10′-11′ for smaller molds or 13′-15′ for medium ones.
Remove from oven and let them cool slightly before unmolding.
Once cool, dust with powdered sugar as desired.
And voilà…your carrot and Greek yogurt donuts are ready to be enjoyed!

👉 You can store the donuts inside a glass dome or an airtight container for 2-3 days at most.
Tips
🟣 For a more indulgent version, you can dip the tops of the donuts in melted dark chocolate melted in a bain-marie.
