First, let me tell you, belonging to the cabbage family, they are considered a food with undisputed anti-cancer properties. They contain a high percentage of antioxidants essential for the health of our bones, liver, and brain. Their regular intake also, significantly reduces LDL cholesterol, that is, the bad one in favor of the good one, besides triglycerides, which we know to be the main risk factors for heart disease. Sure, on the downside, not everyone appreciates this precious vegetable, children in particular, but with this recipe, you’ll see that it will be much easier to introduce such an important vegetable into your diet for the benefit of health and pleasure for the palate. It’s a very clever pizza based on broccoli, vegetarian style, and really low in calories. Moreover, due to its characteristics, it is flour- and yeast-free, so it will surprise you quite a bit! Just blend the broccoli and then mix them with the rest of the ingredients and spread everything in a baking tray. You will get the base for an unusual and tasty pizza, which you can enrich as you wish. I propose the classic margherita pizza topping, with tomato and mozzarella, and the addition of some black olives, which go wonderfully! Ingredients

- 21 oz broccoli (florets)
- 5/6 cup grated parmesan
- 2 eggs
- 2 oz feta
- 1 1/2 tsp herbs (thyme, chives, bay leaf, marjoram or herbs of your choice)
- 1 tsp salt
- 7 oz tomato sauce (datterino type)
- 6 oz pizza mozzarella
- 5 black olives
- to taste dried oregano
- 2 tbsps extra virgin olive oil
Tools

- 1 Baking Tray
- 1 Spatula
- 1 Ladle

- 1 parchment paper

Steps
Start by washing the broccoli florets thoroughly under running water. You can also use the stem, just peel it with a vegetable peeler to remove the tougher outer part.
Dry them well, patting with paper kitchen towels and transfer them into the bowl of a food processor.
Blend in batches until reduced to fine crumbs.
Transfer everything to a bowl, add the eggs, a pinch of salt and the herb mix.
Also add the grated parmesan and the crumbled feta finely.
Mix everything together and pour the obtained mixture onto a baking tray lined with parchment paper, trying to form a disc using a spatula. Compact well and bake in a preheated static oven at 392°F for 15′.
Then take your broccoli pizza from the oven and top it with the tomato sauce, spreading it with a spoon as you would with a normal pizza.
Finish with mozzarella cut into small cubes, pitted olives and cut into rounds, and a sprinkle of oregano. Put back in the oven at 374°F for another 10′ or until the mozzarella has melted well.
Remove from the oven, let it cool slightly before cutting into slices, and serve with a drizzle of raw oil and fresh basil leaves if you like.
And voilà… the fake broccoli pizza is ready to be enjoyed!

👉 You can store the fake broccoli pizza in the fridge for 2-3 days. Freezing is not recommended.
Advice, notes, variations, and suggestions
🟣 * It is important in this preparation that the mozzarella is the pizza type, much drier than a fior di latte, for example. Otherwise, you will need to let it drain for at least 1 hour.
🟣 If you want to experiment with some more unusual combinations, I recommend adding some fresh cherry tomatoes, some anchovy fillets in oil or some quenelles of fresh spreadable cheese, arugula and smoked salmon to be added only at the end of cooking. Of course, you can also enjoy it in its pure form, as it is, since the dough is already quite tasty and nutritionally complete.
