Steps

Dough preparation
In a large bowl, combine the vanilla sugar and lemon zest. Pour in the boiling water and oil, mixing well.
Add the sifted flour with the baking powder. Mix until you get a homogeneous dough, neither too liquid nor too dense.
Take small portions of the dough,
form small balls and make a small hole in the center. Put a little jam in the center.
The recipe is ready in 8-12 minutes, depending on the oven.
Once baked, let them cool a bit. Dust with powdered sugar before serving.
🧊 Storage
At room temperature:
Store them in an airtight container or under a cake dome. They remain soft for 2-3 days.
In the fridge:
You can keep them in the fridge if it’s very hot, but let them return to room temperature or warm them a few seconds in the microwave before serving.
In the freezer:
You can freeze them already baked. Wrap them individually in plastic wrap and then in a freezer bag. They keep for up to 1 month. To enjoy them, thaw at room temperature and, if desired, warm them a few minutes in the oven at 200 °F.
