Ingredients
- 1 roll shortcrust pastry
- 1.1 lbs eggplants
- 4 fresh sausages
- to taste melting cheese
- 1 pinch marjoram
- to taste fine salt
- to taste extra virgin olive oil
Steps
If we are making the shortcrust pastry at home, after preparing it, wrap it in plastic wrap and place it in the fridge while we prepare the other ingredients. Then we will roll it out with a rolling pin on a lightly floured table to a thickness of a couple of millimeters.
1) Wash the eggplants and cut them into not-too-large cubes. Heat a non-stick pan and grill the cubes evenly; then transfer them to a bowl.
2) Preheat the oven to 425°F.
3) Remove the casing from the sausages and set the meat aside.
4) Grate the cheese coarsely or cut it into small cubes (such as Gruyere, Grana Padano, etc…).
5) Add the cheese and sausage meat to the grilled eggplants. Season everything with a pinch of salt, ground pepper, a drizzle of extra virgin olive oil, and marjoram (which pairs perfectly with eggplants) and mix the ingredients.
6) Place the rolled-out shortcrust pastry in a baking dish lined with parchment paper and evenly fill it with the eggplant mixture. Bake our savory pie in the middle of the oven for about 25 minutes or until the shortcrust pastry is golden on both the bottom and edges. Let the savory pie with eggplants and sausages cool before slicing and enjoying it, because, being a crumbly pastry, it might crumble.
