COCONUT AND CHOCOLATE SWIRL POPSICLES

This year, to my great satisfaction, I practically haven’t bought any packaged ice creams! For the first time since I bought these ice cream molds in June, I’ve experimented with a lot of ideas and made healthier and more genuine homemade ice creams for the family. No ingredients with saturated fats like cream with a high content of triglycerides and cholesterol, and no hyperglycemic ingredients like condensed milk, which is often added in this type of preparation. I’m not talking about diet ice creams in terms of low-calorie diets, mind you, because despite the plant-based origin of coconut milk and the absence of cholesterol, this ingredient is very nutritious and provides several calories. But overall there is no comparison to a packaged ice cream rich in hydrogenated oils, sugars, glucose syrup, and even leavening agents, which I wonder what they are for in this type of preparation. In some famous brands, you’ll even find the addition of flours, not to mention the presence of allergens. In short, every now and then you can make an exception to the rule, but it’s much better to invest in health! Moreover, making these coconut and chocolate swirl popsicles is really simple, they are ready to be put in the freezer in no time and you just need a few hours of waiting to enjoy them as an afternoon snack or as a little indulgence after a meal! You will also find great satisfaction in terms of taste and texture, and they will be excellent even to prepare for your children instead of those terrible ice creams full of colorings and sugars! Ingredients

  • 5.25 oz Greek yogurt (coconut flavored)
  • 2 tbsp coconut milk (thicker canned type, not in brick)
  • 2 tbsp agave syrup
  • 2 tbsp shredded coconut
  • 1 tbsp vanilla extract
  • 1.4 oz chocolate topping
  • as needed chocolate topping

Tools

  • 1 Blender
  • 1 Spoon
  • Silicone ice pop molds
  • 1 Toothpick

Steps

  • Preparing the coconut and chocolate swirl popsicles is really easy and quick. Inside a blender, transfer the coconut Greek yogurt and the two tablespoons of agave syrup.

  • Add the vanilla extract as well.

  • Finally, the shredded coconut.

  • Complete by slowly pouring the coconut milk and start blending in intervals.

  • You must obtain a smooth and homogeneous mixture. At this point, pour 2-3 swirls of chocolate topping.

  • Using a toothpick or skewer stick, draw streaks on the surface.

  • Add the sticks and transfer the mixture obtained into the appropriate molds for popsicles.

  • Proceed to fill all the molds, level with a spatula and put in the freezer for at least 4 h but overnight would be better.

  • You can make your popsicles even more delicious with a double swirl, adding a couple of teaspoons of topping for each before placing them in the freezer.

  • After the resting time, unmold the popsicles and place them back in the freezer covered with plastic wrap until ready to serve.

  • And voila… your coconut and chocolate swirl popsicles are ready to be enjoyed!

  • Take them out of the freezer 5′ before savoring them.

Tips, notes, variations, and suggestions

🟣 For an even more indulgent version, once frozen, you can create a dark chocolate coating by dipping each coconut and chocolate swirl popsicle into a glass where you have melted dark chocolate. You could also add coconut chips or pistachio flour to taste and form different varieties all to enjoy.
