Gluten-Free and Lactose-Free Meat Ravioli

Meat ravioli are a classic Italian first course, but in a gluten-free and lactose-free version. The meat ravioli with homemade egg pasta are an easy dish to make even for less experienced cooks, and success is guaranteed. Seasoned with a tomato and basil sauce to enjoy the full taste of the filling. Additionally, these ravioli can be frozen on a tray and then placed in bags to always have them ready.

Ingredients

  • 2 cups flour (for gluten-free pasta Farabella)
  • 4 eggs
  • 1 teaspoon extra virgin olive oil
  • 2 1/2 tablespoons water
  • 10.5 oz ground beef
  • 2 tablespoons extra virgin olive oil
  • 3.4 fl oz white wine
  • salt
  • pepper
  • 1 egg
  • 3.5 oz cheese (vegan grated)

  • 1 Work Surface

Steps

  • Pour the oil into a pan.
    Heat and add the meat.
    Sauté while stirring well.
    After 15 minutes add the wine.
    Let the alcohol evaporate and adjust with salt and pepper.
    Remove from heat and let cool.

    Using a blender or meat grinder, blend the meat with the egg and the cheese.

  • Place the flour in a mound on a work surface, add the eggs, oil, and water in the center.
    Start beating the eggs with a fork and gradually incorporate the flour.
    If the dough is too dry, add more water.
    Form a dough ball and wrap it in plastic wrap. Let it rest for 15 minutes.
    The egg pasta can also be prepared using a stand mixer.

  • Cut a piece of the pasta dough and rewrap the other in plastic wrap.
    Roll it out with a rolling pin or a pasta machine.
    Roll it out multiple times to the desired thickness by adjusting the pasta machine roller.
    Place small heaps of meat on one sheet.
    Fold over.
    Seal the edges well and cut the ravioli.
    Continue in the same way until all the pasta and meat are used.
    Arrange the ravioli on a tray lightly dusted with rice flour.

WARNING: Consult the Italian Celiac Association’s guidelines and read ingredients carefully to ensure they are not contaminated with gluten.

Advice

They can be frozen directly on the tray.
Later, place them in bags.
Store in the freezer and cook them directly from frozen when needed.
