Ingredients for the sugar-free custard
- 3 egg yolks
- 2 1/2 tbsp stevia
- 1/4 cup low glycemic index flour
- 2 1/2 cups milk
- lemon peel (edible rind)

Preparation of the sugar-free custard
In a glass bowl, mix the egg yolks with the stevia and the flour using a wooden spoon until you obtain a thick, lump-free mixture.
In a saucepan, put the milk and the lemon peel cut into strips and free of the white part, place on the stove over moderate heat for 2 minutes, then turn off.
Add 1/4 cup of lukewarm milk to the bowl with the egg, stevia, and flour mixture and mix with the wooden spoon until you obtain a thick, smooth cream.
Pour this cream into the saucepan with the milk, return to the heat over medium heat and stir with the wooden spoon until it starts to thicken, then turn off.
Pour the sugar-free custard into a glass bowl (clean and dry) using a kitchen spatula, cover immediately with plastic wrap placing it in contact with the custard (this prevents a skin from forming on the custard). Let it rest until it cools completely (this will take about 4 to 5 hours).
Once the custard is completely cold, remove the plastic wrap, remove the lemon peels (help yourself with a spoon to do this) and stir vigorously with a hand whisk; in this way you’ll obtain a smooth, velvety, and creamy custard!
Now your sugar-free custard is ready to be used as a spoon dessert or as a filling for tarts, cakes, cookies, and whatever you like!
Storage
You can store the sugar-free custard, once cooled, in the fridge for 2 days in a glass bowl covered with plastic wrap in contact.
Or you can store the custard directly in individual serving cups covered with plastic wrap (obviously if you use it as a spoon dessert).
