The sugar-free custard is a very tasty preparation, perfect even for those who need or want to be careful with sugars and more refined flours. This sugar-free cream has nothing to envy from the classic custard with sugar. The taste will conquer you at the first try! Perfect to be served as a spoon dessert but also as a filling for pies, cakes, and any dessert your imagination suggests!

You can pair this cream with these desserts:

  • Difficulty: Very easy
  • Cost: Very economical
  • Rest time: 6 Hours
  • Preparation time: 5 Minutes
  • Portions: 1
  • Cooking methods: Stovetop
  • Cuisine: Italian
  • Seasonality: Every season

Ingredients for the sugar-free custard

  • 3 egg yolks
  • 2 1/3 tbsp stevia
  • 1/4 cup low glycemic index flour
  • 2 1/2 cups milk
  • lemon zest (edible peel)

Useful tools for making sugar-free custard

  • Kitchen scale
  • Saucepan
  • 2 Bowls
  • Wooden spoon
  • Spatula
  • Whisk
  • Knife
  • Cling film
  • Spoon

Preparation of the sugar-free custard

  • In a glass bowl, mix the egg yolks with stevia and flour using a wooden spoon until you get a thick and smooth mixture without lumps.

  • In a saucepan, place the milk and the lemon peel cut into strips, without the white part, and put on the stove over moderate heat for 2 minutes, then turn off.

  • Put 4 tablespoons of lukewarm milk into the bowl with the egg, stevia, and flour mixture and mix with the wooden spoon until you get a thick and smooth cream.

  • Pour this obtained cream into the saucepan with milk, put back on medium heat, and stir with the wooden spoon until it starts to thicken, then turn off.

  • Pour the sugar-free custard into a clean and dry glass bowl using a kitchen spatula, cover immediately with cling film placing it in contact with the cream (to prevent a skin from forming on the cream), let it rest until it cools completely (it will take about 4 to 5 hours).

  • Once the cream is completely cold, remove the film, remove the lemon peels (use a spoon to do it) and mix vigorously with a hand whisk, this way you will get a smooth, velvety and very creamy custard!

  • Now your sugar-free custard is ready to be used as a spoon dessert or as a filling for pies, cakes, cookies, and whatever you like!

Storage

You can store the sugar-free custard, once cold, in the fridge for 2 days in a glass bowl covered with cling film in contact.

Or you can store the cream directly in single-serving cups covered with cling film (obviously if you use it as a spoon dessert).
