Ingredients

  • 8.5 oz broccoli (cleaned)
  • 9 oz potatoes
  • 3.5 oz carrots
  • 1 egg yolk
  • 1 tbsp Grana Padano DOP
  • as needed breadcrumbs
  • 1 clove garlic (as desired)
  • 1 pinch curry (as desired)
  • extra virgin olive oil
  • salt
  • pepper

Preparation

  • Separate the broccoli florets and wash them. Peel the carrots and potatoes, wash them and cut them into chunks.

    Put all the vegetables in a pan, with a drizzle of oil, a clove of garlic if desired, and a finger of water.

  • Add salt, pepper, and cook until they are tender (1). Alternatively, boil them in salted water for 6-7 minutes.

    Transfer the cooked vegetables to a mixer (or blender) and blend them until they become a puree.

  • Put them in a bowl, add the Grana, the egg yolk, a pinch of curry (if you like) and 5-6 tablespoons of breadcrumbs (2).

    Mix well until you get a soft but moldable mixture with your hands. Adjust the amount of breadcrumbs based on the consistency.

  • Divide the mixture into 6-8 parts and shape them into burgers, with your hands or with a special mold. Roll the burgers in breadcrumbs and place them on a baking tray lined with parchment paper (3).

    Brush them on top with a little extra virgin olive oil or seed oil.

  • Place the tray in a fan oven at 375°F and bake the burgers for 20-25 minutes, depending on their thickness, until a slight crust forms on the surface.
