Ingredients for Puff Pastry Fans with Jam:

  • 1 sheet of rectangular puff pastry
  • as needed granulated sugar
  • as needed apricot jam

Steps for Preparing and Cooking Puff Pastry Fans with Jam.

  • Unroll the rectangular puff pastry sheet on a cutting board (leave the parchment paper), generously sprinkle granulated sugar on the pastry and use a rolling pin to gently press the sugar into the pastry, turn the pastry and repeat the process.

  • Take the jam and put 4/5 tablespoons in a bowl and stir well, then use a spatula to spread it over the pastry leaving half an inch free from the edges.

    Now fold the pastry from the long side, make folds of about 0.8 inches until reaching the middle of the rectangle, then turn the rectangle and do the same process from the other side.

  • Overlap the two halves and sprinkle more sugar.

    Cut the fans into 0.6 inch thickness, then place them on a baking tray (leave some space between them) and bake at 356°F for about 20 minutes, until they start to brown.

    For air fryer cooking 320°F for 15 minutes.

    Let the fans cool before consuming, they can be stored under a glass dome for 2/3 days but we assure you they disappear sooner.

Notes

For this recipe we used apricot jam but you can use any jam or marmalade flavor you prefer, you can also make half with one flavor and the other half with another flavor.

Another alternative is to use hazelnut or pistachio cream.
