The fried cod, cooked in hot oil, simply floured, and in the same oil the peppers and potatoes are cooked, which are usually cooked without tomato, but I wanted to enrich them with the addition of ripe tomato and black olives, the final result is an explosion of taste, and what a taste. Ingredients for Fried Cod with Peppers and Potatoes
- 28 oz Desalted Cod
- 2.2 lbs Potatoes
- q.b. Green Horn Peppers
- q.b. Tropea Red Onions
- q.b. Sunflower Oil
- q.b. Baked Black Olives
- 1 Tomatoes (ripe)
- q.b. Salt
- q.b. Oregano
- q.b. Flour

Preparation of Fried Cod with Peppers and Potatoes
First of all, if we don’t have it ready, soak and desalt the cod, 3 days in advance, here you will find all the instructions to do it. Cut it into pieces once soaked. Let it drain while we prepare the potatoes.
Peel and slice the potatoes, leaving them in cold water. Also prepare the peppers and onion, the peppers, washed, cut in half and seeds removed, the onion left in thick slices.
Flour the cod and fry it in the pan in abundant oil, let it brown on all sides, it may take some time, let it sit for 10-15 minutes, as needed to brown it. Then remove it from the oil, let it dry on paper. Do not add salt because the cod retains a bit of conservation salt.
In the same oil, fry the potatoes. At the beginning, put only the potatoes and let them cook for at least 10 minutes, when a crust starts to form add peppers and onions, without mixing, let them cook further. When the potatoes are golden on the base you can give a stir, otherwise, they will break.
When the potatoes are cooked, add a finely chopped tomato, some black olives, oregano, and salt and let them flavor for a few minutes. Before the tomato burns, remove the peppers and potatoes with tomato from the oil and drain them well, then let them dry on paper.
The last step is to put everything in a baking dish, fried cod and the peppers and potatoes with tomato. Put in a hot oven at 356°F for about 10 minutes, take it out and enjoy all its goodness, fried cod with peppers and potatoes in the Nicastrisi style, a divine dish for how simple it is.
