A good second course, easy and quick, with chicken breast, different from the usual, flavored with soy sauce and raw chives. To prepare pineapple chicken, you need a few simple ingredients, besides chicken and pineapple, fresh ginger, which we can also replace with lemon, and soy sauce, ingredients that are always in my fridge. I love meat cooked with soy sauce, and I prepare it very often, like chicken with vegetables in soy sauce.
So let’s see how to prepare pineapple chicken at home, an exotic recipe with a pleasant taste, to prepare in just a few minutes at home, without the need to marinate the chicken, it becomes tender and very tasty.

- 1 1/2 Chicken Breast
- 2 slices Thick Pineapple

Preparation of Pineapple Chicken
Let’s start by cleaning the pineapple, removing the skin, cutting it into thick slices, and then into chunks, removing the central part of the slice which is more fibrous and hard. Set the pineapple aside and proceed to cut the chicken.
Cut the chicken into small chunks as well, if it is moist, dry it a bit, then coat it in flour, shaking off all the excess flour. I used cornflour for a gluten-free version, but regular flour is fine too.
In a large pan, put a little olive oil with grated ginger, let it brown for a moment, then add the chicken and let it brown well for a few minutes over high heat.
When the chicken is browned, add the soy sauce and continue cooking for another minute, finally add the pineapple, a little salt, and cook for a few minutes.
When the chicken is well cooked, we can serve it with finely chopped chives. The chicken cooks in about 5-8 minutes, if you need to prepare more, it’s better to use 2 separate pans, so it cooks at the same time and better, being more spread out in the pan.
We can serve the pineapple chicken while still hot, perhaps accompanied by good plain basmati rice, with a bit of chives on top.
