- 3.5 oz scamorza
- 1 egg
- to taste extra virgin olive oil
- to taste cornmeal (or breadcrumbs)
- to taste parmesan cheese
- 5.3 oz prosciutto

How to Make Zucchini Skewers with Prosciutto
Wash and trim the zucchini at the ends, then slice them horizontally to a thickness of about 1/4 inch.
At this point, coat the zucchini slices first in the egg and then in the cornmeal.
Cook in an air fryer at 400°F for 10 minutes (a traditional electric oven works well too) with a drizzle of oil.
After the cooking time, take them out and fill each slice with prosciutto and cheese.
Roll them up and skewer them on a skewer stick, alternating the rolls with other breaded zucchini slices.
As a final step, bake the zucchini skewers with prosciutto again for the time needed until the cheese melts completely. Serve them hot.
Storage of Zucchini Skewers
This delicious and quick recipe can be easily prepared well in advance, finishing the final baking only 10 minutes before serving. Anyway, since I have tried them, I assure you they are great even cold. If there are leftovers, you can store them in the fridge for about a day, covered with plastic wrap.
