Ingredients

  • 4 eggs
  • 9 oz cleaned potatoes
  • 4 oz fresh sausage
  • 2 tbsp grated Parmesan cheese
  • to taste salt
  • to taste extra virgin olive oil

Steps

  • Peel and wash the potatoes.
    Cook them in a pot with water, once cooked, drain them and let them cool.
    Once cooled, cut them into small pieces.
    In another bowl, place the crumbled fresh sausage.

  • Beat the eggs with a fork, add a pinch of salt and the tablespoons of grated Parmesan cheese.

  • Incorporate the potatoes and crumbled sausage into the eggs, mix well.
    Pour the mixture into an 8-inch diameter cake pan with a little oil on the bottom.
    Bake at 392°F for about 10 minutes.
