- 1 onion
- 5 oz potatoes (or celeriac)
- 3.5 oz carrots (or pumpkin)
- 1 stalk celery
- 5 oz wholemeal flour
- 1 tablespoon curry

Homemade Soy Burgers Preparation
Preparation in a pot
I soaked the soybeans for 12 hours in natural water.
Then I cooked them in the same water in a pressure cooker for 20 minutes with the whole onion, carrots, potatoes, and celery, without salt. At the end of cooking, I drained and let them cool.
Do not discard the broth as you can make soups.
Then I blended them adjusting them with salt and pepper to taste, and curry.
Once the cream was obtained, I added the flour and kneaded. The dough is somewhat sticky but do not worry, you can wet your hands if needed or add a little more flour, but do not overdo it, otherwise they will become hard.
At this point, sprinkle a sheet of parchment paper with some flour, put the dough on it, and form a sausage shape. Wrap it like a candy.
Let it rest in the fridge for 30 minutes or in the freezer for 15 minutes.
After the time has passed, roll it out with a rolling pin to a thickness of about 1/4 inch.
Use a floured cookie cutter to cut the burgers.
Brush each burger with extra virgin olive oil, heat a hot pan, and cook them for 1 minute on each side.
Serve them with vegetables as you like. Here are your homemade soy burgers ready.

After 12 hours, place the beans and potatoes in the basket, with the soaking water in the bowl, while the rest of the vegetables are chopped coarsely and placed in the varoma tray. Close the lid and cook for the time described on the package at 212°F speed 1
The cooking time may vary depending on the dryness of the beans, that’s why I don’t specify it.
