Fragrant, tasty, and super simple, they are made with ingredients we all have at home and everyone likes them. The cotechino completes everything and makes the dish nicely rich, but without being heavy.
These lentils with cotechino are perfect if you want to respect the tradition, eat something good and not spend hours at the stove. They can be prepared in advance, heated quickly, and always make a great impression on the table. A lucky dish yes, but above all, really good.

Ingredients
- 8.8 oz pre-cooked cotechino
- 8.8 oz red lentils
- 1 tsp cumin
- 1/2 tsp sweet paprika
- carrot
- celery
- 2 cherry tomatoes (or tomato paste)
- 1 tsp ground turmeric
- natural plain yogurt
- pomegranate
Steps
Prepare a mince with carrot and celery and if you like, also onion or garlic, I don’t use it.
Brown in a pan, add the spices, the cherry tomatoes or tomato paste, and lentils, add water or broth and cook for about 30-40 minutes.
Meanwhile, cook the cotechino according to the box instructions.
When everything is cooked and warm, arrange the lentils on the serving plate, add yogurt or cooking cream, the slices of cotechino, and decorate with pomegranate seeds.
