- 1 cup cooked cauliflower
- 1.75 oz robiola cheese
- 1 tbsp extra virgin olive oil
- to taste salt

Meanwhile, as you prepare the sauce, you can cook the pasta.
Once the cauliflower is cleaned and blanched, place it in a blender with a bit of cooking water and blend until you obtain a smooth and homogeneous cream.
Pour the cream into a pan with the tablespoon of extra virgin olive oil, put on the heat.
Season with salt, garlic powder, and a generous sprinkle of turmeric, stir.
Add the creamy cheese and mix over low heat.
Turn off the heat, when the pasta is cooked, mix with the sauce and if needed, add a bit of cooking water.
In the penne with cauliflower and turmeric cream, I used classic cauliflower but you could use purple or orange cauliflower which already give a bright color to the dish.
