The air fryer gratinated fennel with stracchino is a real delight, my mother has always prepared GRATINATED FENNEL with BÉCHAMEL, while the first time I tasted fennel with stracchino was when Luisa from Allacciate il grembiule! prepared them, and since then, I’ve been making them all winter because they are not only really simple, but I find them truly delicious!

Ingredients
- 1.1 lbs fennel
- 10.6 oz stracchino cheese
- extra virgin olive oil
- breadcrumbs
- salt
Preparation
Wash the fennel and remove the ends.
Slice the fennel very thinly with a knife or mandoline.
Cook the fennel in salted boiling water for 15 minutes.
Drain the fennel and set aside.
Lightly grease a tray that fits in your air fryer with extra virgin olive oil.
Sprinkle the base of the tray with some breadcrumbs, which will help absorb the moisture released by the stracchino cheese during cooking.
Place the fennel in the tray and cover with stracchino cheese.
Cook the gratinated fennel in the air fryer at 392°F for 10 minutes.
Once ready, serve them immediately while hot.
If you wish, you can gratinate the fennel in a static oven at 392°F for 15 minutes.
Conservation
The air fryer gratinated fennel can be stored in the fridge for 3 days.
