LIGHT FRUIT SALAD TIRAMISU IN A BOWL

It’s unusually hot for this time of year! I don’t know about you, but I’m feeling it! I feel like a sloth with every move I make! I’m always tired and sometimes even out of breath just from making the bed! I feel like I’ve just run the New York marathon, but all I’ve done is tidy up the house. I even have little desire to cook, and what I do prepare involves only cold, quick, and mainly vegetable-rich dishes! This is how I try to combat the chronic fatigue and the obvious signs of muscle decay left by this period of inactivity, which I hope to recover from soon! Even the desserts must follow the same rule for my personal need! That’s why, if you find yourself relating to these few lines, I recommend treating yourself to this refreshing fruit salad tiramisu! It can be prepared directly in a bowl, so it’s much more practical and perfect for two people. Plus, it’s really quick to make, taking only ten minutes of your time, and you’re done! Ultimately, besides the benefits just listed, I’d say it’s also pretty light, considering that the mascarpone cream used to garnish the dessert is egg-free and is simply lightened with plain or fruit yogurt! The soak, instead of coffee, is based on sugar-free pomegranate juice, but if you can’t find it, you can substitute it with any juice of your choice. It will be the perfect and delicious dessert to enjoy at the end of the meal, and you’ll have indulged in a pleasant treat without too much guilt!

Ingredients

  • 2.65 oz Pavesini
  • 5.3 oz Mascarpone
  • 2 tsps Powdered sugar (leveled)
  • 4.4 oz Fruit yogurt
  • 6 tbsps Pomegranate juice
  • 1 Orange
  • 10 Strawberries
  • 1/2 Banana
  • 2 slices Pineapple

Tools

  • 2 Bowls
  • 1 Spoon
  • 1 Mixing bowl

Preparation

  • Start by mixing the mascarpone with the sifted powdered sugar and fruit yogurt in a bowl.

  • In another bowl, soak the Pavesini, without over-soaking them, in the pomegranate juice.

  • Place a first layer of soaked Pavesini at the base of your bowl and cover with a few spoonfuls of mascarpone cream.

  • Wash, peel the fruit, peel the orange to the flesh, cut into chunks, then place a few pieces of each type of fruit on top.

  • Repeat the operation until you have used all the ingredients. I made a total of 3 layers. Put in the freezer for 15′, then in the fridge for another 15′ before serving. And there you have it… the fruit salad tiramisu in a bowl is ready to be enjoyed!
