Today I want to offer you a very fresh dressing, perfect for seasoning pasta, stuffing sandwiches, spreading on crostini and bruschetta, accompanying both white and red meats! In short, a real kitchen ace! I especially recommend it when you have very little time and the desire to cook is lacking, so just get organized to prepare a top lunch! You can prepare it in advance, freeze it in single-serving cups, and you’re good to go! A quick and easy way, just a blender and no stove, to bring a lot of flavors to the table with just three ingredients: arugula, avocado, and a handful of cashews and almonds. The flavor is slightly spicy due to the arugula but is quite tempered by the delicacy and creaminess of the avocado which, as often mentioned, is a very precious food for our health, which should be consumed regularly thanks to the numerous vitamins it contains (B, C, and K, and carotenoids), but especially because it increases good cholesterol (HDL), thus helping to keep our heart healthy! Therefore, a light recipe also suitable for those following a vegan diet as it does not contain any animal-derived products. Can you find a reason not to prepare it right away?

Ingredients
- 3 1/2 oz Arugula
- 2 avocados (ripe)
- 1 lemon juice
- 1 oz cashews
- 3/4 oz almonds
- to taste extra virgin olive oil
- 1 pinch Salt
- to taste pepper
Preparation
Wash the arugula, squeeze it well, and chop it, removing the thicker stems. Peel the avocados, remove the central pit, and slice them, then drizzle them with the lemon juice. Place everything in the blender and add the cashews and almonds.
Add a pinch of salt and pepper, then start blending in batches, adding the oil in a stream until you achieve a creamy consistency. And voilà… your arugula and avocado pesto is ready to be enjoyed!
