Chickpea flour omelette without eggs and vegetables, a unique, economical, and vegan dish that allows us to eat legumes without even realizing it.
I opted for baking it, but if you wish, you can cook it in a pan or air fryer.
Here in Liguria, chickpea omelette, or as we call it farinata, is a typical dish we even eat simply without anything or with onion and in season with artichokes.
Try to make it thin because it should be soft inside but crunchy outside.

Ingredients
- 3/4 cup chickpea flour
- 1 1/4 cups water
- 1 1/2 tbsp extra virgin olive oil
- 1 tsp fine salt
- 1 tsp turmeric powder (optional, used for color)
- to taste black pepper
- 1 carrot
- 1 zucchini

- 1 Baking tray
- 1 Parchment paper
Steps
In a bowl, put the chickpea flour, water, and mix well with a whisk. All the flour should dissolve well, without forming lumps. Then add turmeric, salt, pepper, and oil, and mix.
Francy’s Tip: if you can’t get rid of the lumps, let it rest for a quarter of an hour, and you’ll see, as if by magic, they will disappear.
Using a mandolin, cut one carrot and one zucchini into julienne strips.
Add the vegetables to the mixture and adjust with salt and pepper, if necessary.
Pour the mixture into a rectangular baking tray, lined with parchment paper that has been wetted and wrung out. I use a special tray, I’ll leave you the link in the tools section, which cooks the farinata evenly.
Before baking, add a drizzle of oil.
Bake in a preheated oven at 392°F for about 20/25 minutes or until cooked.
