  • 1/2 cup 0% fat Greek yogurt
  • 1/2 tablespoon extra virgin olive oil
  • to taste black peppercorns
  • 1 tablespoon lemon juice
  • to taste fine salt
  • 7 oz lettuce
  • 6 plum tomatoes (or whatever you like best)
  • 2 tablespoons pitted Riviera olives
  • 3 tablespoons feta cheese (cut into cubes)

  • In a small bowl, pour the Greek yogurt and the half tablespoon of extra virgin olive oil.

  • One tablespoon of lemon juice, the salt, the pepper, and mix very well.

  • You will get a smooth sauce with a liquid consistency.

  • Wash and dry the salad. I use a salad spinner to dry the salad; if you don’t have it, I absolutely recommend it, you can find the model I use among the tools.

    Cut the lettuce, add the plum tomatoes cut into quarters, the pitted olives, and the feta cheese, and dress with the yogurt sauce.
