- 1 bunch parsley
- 1 clove garlic
- to taste extra virgin olive oil
- 3 zucchini (small)
- 1 clove garlic (optional)
- 230 g canned cannellini beans
- 1 round eggplant (large)

Steps: Eggplant Tacos with Vegan Filling
Chop the parsley with a clove of garlic.
Francy’s Tip: if you don’t like garlic, you can flavor the oil by simply heating it in a small pot with a clove of garlic, then remove it and add only the parsley.
This step should be done first so that the oil absorbs all the flavors.
Leave to infuse.
Wash and dry the eggplants and slice them not too thickly.
Salt the eggplants and let them drain with a weight on top in a colander to remove the bitter taste, for about half an hour.
Cook the eggplants on a hot grill pan,
Francy’s Tip: to avoid burning the parsley, cook the eggplants first and season them only afterward with the flavored oil.
Wash and slice the zucchini into rounds.
Cook them in a pan with a clove of garlic (optional).
Blend the zucchini with the cannellini beans.
Once the filling is obtained, you can proceed to prepare the recipe.
Spread the eggplants with the filling.
