Today I want to offer you a bean soup: wellness on a plate.

It’s a typically winter dish, which I hope can warm your evenings and which you can use as a detox dish before and after the Christmas binge.
With few ingredients, you’ll prepare a delicious soup, a healthy dish full of winter vegetables like carrots and onions, and it will become complete with the addition of beans, which, as you know if you follow me, are a good source of protein and an excellent source of fiber and folates.

By the way, a few days ago I finished reading the interesting book by Valter Longo, known for the fasting-mimicking diet, “The Longevity Diet” which I recommend because it’s full of interesting insights, and he also advises increasing the consumption of legumes to at least three times a week.

Bean Soup: Wellness on a Plate

Ingredients to prepare: bean soup wellness on a plate

  • 14 oz dried borlotti beans
  • 7 oz white onion
  • 7 oz dried cannellini beans
  • 7 oz tomatoes
  • 5.3 oz carrot
  • 2 stalks celery
  • 0.7 oz tomato paste
  • to taste rosemary (sprig)
  • 2.1 qt water
  • to taste salt
  • to taste extra virgin olive oil
  • to taste pepper

Steps

  • First, soak the borlotti and cannellini separately for at least 8 hours.

    After soaking, drain the beans, pour them together into a pot containing cold water, and boil them for about 45 minutes.

    Chop the celery, carrots, and onion and add the mix to a pot with a splash of oil, sauté, add the chopped tomatoes and rosemary, cover everything with 2 quarts of water.

    Salt, pepper, and bring to a boil, let it cook for about an hour.

    After about half an hour, add the tomato paste.

    After an hour, remove the rosemary sprig, adjust the salt, pepper, and drizzle with a bit of oil.
