Brie, pumpkin, and speck crostini are simply exquisite, easy and quick to prepare, perfect for aperitifs and appetizers, but you can easily enjoy them as a main course. Ideal for holiday lunches or dinners with friends.

Ingredients for Brie, Pumpkin, and Speck Crostini
- 1.1 lbs pumpkin
- 1 bread loaf (with olive oil or baguette)
- Half onion
- 24 slices brie (small or 12 larger)
- 3 slices speck
- to taste salt
- 1 pinch nutmeg (optional)
- to taste extra virgin olive oil

Preparation of Brie, Pumpkin, and Speck Crostini
Let’s see how to prepare the crostini.
First, clean the pumpkin and cut it into cubes, chop the onion and sauté with a drizzle of oil in a pan, then add the pumpkin with a little water, salt it, and cook over low heat covered with a lid for about 8/10 minutes, the pumpkin should be cooked but firm, once cooked let it cool a bit. Meanwhile, cut the bread slices slightly diagonally to make the slice a bit larger, drizzle with a little oil and toast on the oven grill, when they are ready remove them from the oven, cut the speck into strips put it in a pan or small pot and brown it a bit until it becomes crispy. Cut the brie into slices, I put 2 per slice, it depends on how big both the bread and the brie are, otherwise, you can put just one. Now everything is ready to assemble the crostini, on each slice of bread put the brie cheese, then add a nice layer of cooked pumpkin, and finally add the crispy speck, continue this way with all the crostini, arrange on a serving dish and serve with a few basil or parsley leaves. The pumpkin should be warm, they will be even better.
Notes
If you prepare them in advance, if it’s winter you don’t need to put them in the fridge, otherwise if it’s hot, better store them in the fridge covered with plastic wrap, they keep for a couple of days. I recommend heating them and serving them warm because they are fabulous.
