Spinach Casserole

Spinach Casserole Ingredients

  • 2 cups bechamel sauce
  • 2 eggs
  • 2 oz grated Parmesan cheese
  • to taste extra virgin olive oil
  • to taste gluten-free breadcrumbs

  • to taste grated nutmeg
  • 1 clove garlic

Spinach Casserole Preparation

  • Let’s see how to prepare the casserole.

    First of all, wash the spinach well, put them in a pot with plenty of salted water, and blanch for a few minutes, drain, sauté in a pan with a little oil and a clove of garlic, salt and stir, when they are cooked let them cool and if necessary squeeze them to remove excess water, chop them a little finely. In the meantime, prepare the bechamel sauce. In a bowl, place the eggs with the grated cheese and beat well, add the spinach, 2/3 tablespoons of breadcrumbs, and a bit of nutmeg, then add the bechamel sauce and mix well. Take a baking dish, butter it well, and sprinkle with breadcrumbs, pour the prepared mixture and spread it well, sprinkle with breadcrumbs and grated Parmesan, bake in a hot oven and cook at 392°F (200°C) for about 15-20 minutes or until golden, let it cool for about 10-15 minutes before serving, otherwise it will break when serving. If you don’t want to clean the spinach, you can use frozen or already cooked ones you find at the supermarket, the important thing is to squeeze them well, otherwise, the casserole will be more liquid. The casserole can be stored for a maximum of two days either in a closed container or covered with food film. You can also prepare it a few hours in advance, just heat it a little before serving.
