- 16 cherry tomatoes
- 1 bell pepper
- 1 Mini baguette
- 2 carrots
- 2 red beets
- 3.5 oz arugula
- 7 oz iceberg lettuce (or butterhead)
- 7 oz Pecorino cheese

Preparation of Rustic and Rich Salad
Let’s see how to prepare the rustic and rich salad
First, we need to wash all the vegetables well and let them drain thoroughly.
Slice the baguette and place it in a pan to toast a little; I left them quite light, just to make them a bit crispy.
In a large bowl, pour the arugula and chopped lettuce, peel the carrots and cut them into julienne and add them, also peel the beetroot and cut it into small strips or you can also julienne it. Take the bell pepper, divide it in half, remove all the seeds and internal filaments, cut it into strips, and put everything in the bowl. Season to taste, I simply put oil, salt, and vinegar, mix well. Cut the pecorino into cubes and add it to the salad with the bread, plate it and serve. If you want it even richer, you can also add some chopped walnuts.
