Butternut squash mini pizzas are a tasty appetizer or second course, easy and quick to prepare , an original way to make squash enjoyable even for your children; you could even involve them in the preparation. A healthy and light dish ideal for those on a diet who can’t eat pizza.

- 12 slices butternut squash
- 2 mozzarella cheeses
- as needed tomato puree
- as needed salt
- as needed oregano
- as needed extra virgin olive oil

Preparation of Butternut Squash Mini Pizzas
Let’s see how to prepare the mini pizzas.
Cut the squash in half and take the seedless part, slice it between 1/4 and 1/2 inch thick, and remove the skin; place the slices on a baking sheet lined with parchment paper, add a pinch of salt and a drizzle of oil, bake for about 20 minutes in a preheated oven at 355°F. Meanwhile, in a bowl, season the tomato with salt, oregano, and a drizzle of oil, and mix well with a spoon, cut the mozzarella into slices or cubes. When almost cooked, remove from the oven, top with the tomato and the mozzarella. Put the squash back in the oven for about 10 minutes or until the mozzarella has melted. Remove from the oven and serve with a sprinkle of oregano, if needed add a drizzle of oil.

If you don’t like oregano, you can omit it; if there are leftovers, store them in the fridge covered with plastic wrap, then just reheat them either in the microwave or for a few minutes in the oven.
