Muffins with Concord Grapes

Ingredients

  • 1 1/4 cups all-purpose flour
  • 1/3 cup cornstarch
  • 2/3 cup non-fat plain yogurt
  • 2/3 cup sugar
  • 3 eggs
  • 1 packet baking powder
  • 9 oz Concord grapes

Steps

  • In a bowl, pour the eggs and sugar and start working with the electric beaters.
    When they are nice and frothy, add the yogurt while continuing to mix.

  • Gradually incorporate the flour mixed with cornstarch and baking powder.
    Mix with a spatula, moving from top to bottom.

  • Pour the batter into the tulip cups and finish with the addition of well-washed Concord grapes.
    Bake in a preheated oven at 350°F for 20-25 minutes, and before removing from the oven, perform the toothpick test.

The muffins with Concord grapes maintain their freshness for 3-4 days when properly stored in the fridge, just wrap them with plastic wrap and when ready to consume, heat them for a few seconds in the microwave.
