A very simple seasonal side dish that pairs well with all main courses. Cabbage with raisins and walnuts, cooked directly in a pan, is quick to prepare and very appetizing, thanks to its slightly sweet and sour flavor. You can use either white or purple cabbage, or even savoy cabbage if you prefer. The recipe is really easy, a tasty alternative to the classic Cabbage and speck salad!

Ingredients
- 1 lb cabbage
- Half onion
- 1/4 cup raisins
- 5 walnuts
- 2 tablespoons vinegar
- 1 tablespoon sugar
- extra virgin olive oil
- salt
- pepper
Tools
- Pan
- Bowl
- Nutcracker
Preparation
Soak the raisins in warm water for about 15-20 minutes.
Meanwhile, clean the cabbage by removing the harder central stem and a couple of outer leaves if they seem damaged.
Wash it and cut it into thin strips.
Chop the onion and sauté it in a pan with a little olive oil.
Add the cabbage and salt it (1). Cover and cook for 10-15 minutes, or until tender. You can add 2-3 tablespoons of hot water to help with cooking.
Drain the raisins well and add them to the cabbage (2).
In a small bowl, mix the sugar with the vinegar. Pour the mixture into the pan, stir, and let the vinegar evaporate.
Finally, add the walnuts, shelled and coarsely chopped (3). Stir and adjust the seasoning with salt and pepper.
Cabbage with raisins and walnuts is ready. Serve it hot or warm as a tasty side dish.
Tips and Notes
If you want to prepare the dish in advance, I recommend adding the walnuts at the last moment to keep them crunchier.
Cooking times may vary depending on how you cut the cabbage. Adjust by tasting, based on your preferences.
You can substitute the cabbage with savoy cabbage, following the same procedure.
