Gingerbread man cookies are ginger-flavored cookies with other spices. They are typical holiday cookies. Simple to make and perfect to prepare with your children, it is customary for me to prepare them for the Feast of the Immaculate Conception.
Ingredients
3 1/4 cups All-purpose Flour
1/2 cup butter
7/8 cup Sugar
2 Eggs
1 tsp Baking Soda
1 heaping pinch Ground Cinnamon
1 heaping pinch Ground Ginger
1 pinch Nutmeg (optional)
For the Royal Icing
1 cup Powdered Sugar
1.5 tbsp Pasteurized Egg White

Preparing Gingerbread Man Cookies
Let’s see how to prepare the cookies.
In a bowl, pour flour, sugar, and baking soda and mix well, add the softened butter cut into pieces, the powdered aromas, and the egg. Start kneading trying to melt the butter by mixing it with all the ingredients. Knead until it becomes smooth and homogeneous, let it rest wrapped in plastic wrap in the fridge for about 30 minutes. After the time, roll out the dough to about 1/8 to 3/16 inches thick, then cut with cookie cutter shapes. Place the cookies on a baking sheet lined with parchment paper and bake at 356°F in a hot oven for about 8/10 minutes. When they are ready, let them cool, and in the meantime prepare the royal icing. First, pasteurize the egg white, then pour it into a small bowl with the powdered sugar and mix well until it becomes a fairly firm cream, put it in a pastry bag, cut the tip, and decorate all the cookies as desired.
Notes
If you want to make colored icing, just add some food coloring. The cookies can be stored for up to 10 days in a closed container.
