Tonnarelli with burrata and anchovies, here is a main course that everyone loves, simple and very quick. You have surely noticed that I use the microwave a lot, especially with the Crisp cooking method. Since I discovered and used it for the first time, I haven’t gone without it. When I come home late, I immediately put on the pot with water for the pasta and in the meantime, I cut the cherry tomatoes and cook them in the microwave. A great help in the kitchen.

Ingredients

  • 1 lb lbs fresh pasta (tonnarelli)
  • 9 oz oz burrata
  • 10.5 oz oz tomato pulp
  • 8 fillets anchovies in oil
  • 8 cherry tomatoes
  • 8 sprigs basil
  • 2.8 tbsp tbsp extra virgin olive oil
  • 1.6 tsp tsp fine salt
  • 1 clove garlic
  • 1 sprig thyme

Steps

  • In a pan, brown the garlic with two tablespoons of extra virgin olive oil, add the tomato pulp, the basil, and adjust with salt. Cook for 15 minutes and in the meantime wash the cherry tomatoes and cut them in half, place them on the microwave Crisp tray with parchment paper. Season them with salt and extra virgin olive oil, basil, and thyme and cook them for 15 minutes at maximum power. Boil the tonnarelli fresh pasta and leave them al dente. Toss the tonnarelli with the tomato, add the anchovy fillets cut into pieces and the cherry tomatoes gratin in the microwave. With the heat off and directly on the plates, divide the burrata with a drizzle of olive oil and fresh basil.
