Air Fryer Roast Beef with Cherry Tomatoes

Today I’ll take you to the kitchen with me to prepare an Air Fryer Roast Beef with Cherry Tomatoes. An easy recipe that will win you over at the first bite. I love dishes that seem complicated, beautiful to serve as well as delicious, but that are actually prepared in a few minutes and this is one of those.

The meat stays juicy and tender inside, while a golden crispy crust forms on the outside. The cherry tomatoes, cooked together with the roast, become sweet and aromatic, perfect for accompanying the meat without needing anything else.

In the end, preparing a roast beef in an air fryer is not complicated at all. In fact, with a few ingredients and a little attention, we bring to the table a main course that makes a great impression and is always liked by everyone.

Ideal, but especially delicious, for stuffing sandwiches or enriching salads.

Ingredients

  • 2.2 lbs adult beef eye of round
  • 14 oz red cherry tomatoes
  • as needed extra virgin olive oil
  • as needed aromatic herbs
  • as needed salt

Preparation

Remove the meat from the fridge at least 40/60 minutes before cooking and let it come to room temperature. This way it won’t experience thermal shock and harden. Chop fresh herbs: sage, rosemary, thyme, marjoram… all the ones we like the most. Spray extra virgin olive oil all around our roast, sprinkle it with herbs, and season with salt. At this point, preheat the air fryer, setting it for 4 minutes at 392°F (200°C).

Meanwhile, wash the cherry tomatoes, dry them, cut them in half, and simply season them with extra virgin olive oil and salt.

Finally, place the meat and cherry tomatoes in the basket, preferably on a sheet of parchment paper to keep it as clean as possible. Close and cook again at 392°F (200°C) for 9 minutes. After this time, turn the roast and continue cooking for another 9 minutes. Once cooked, open the basket and let it cool.

Serve our Air Fryer Roast Beef with Cherry Tomatoes, only after letting it rest in the fridge for at least two hours.

Compared to traditional cooking, we will have less cooking juices to drizzle on it. If necessary, prepare an emulsion of extra virgin olive oil and balsamic vinegar.

Advice, Storage, and Variations

The roast beef can be stored in the refrigerator for at least two days, sliced or not, but in an airtight container, possibly in glass or ceramic.

We can also freeze it, but remember that it should be thawed in the fridge and never at room temperature.

If you don’t like or can’t find fresh herbs, we can substitute them with dried ones.

The cherry tomatoes can also be replaced depending on the season in which we decide to prepare our roast beef. Maybe with potatoes, squash, onions, fennel…
